The event

Everything for this quote is entered on this page. The pages behind it hold the cost prices and nothing else.

How it reached us

Food

Pick the dishes. Each one you pick is one item a guest, so three canapes chosen is three canapes a guest. The counts underneath can be overridden for anything unusual.

Not on the dish lists

Dessert canapes have no dish list in the allergen master, so they go on by hand. The cheaper bowl rate swaps the rate without changing the count.

On the costing

LineA guestCoversCost eachCostCharge
Covers come from the guest count. Staff food runs on the crew the rota adds up to, plus ten percent. Food cost £0   charge £0
Nothing picked yet.

Drinks

We quote the drinks and somebody else pours them. Pick what is being served, say how many of each, and the order works itself out from the recipes.

Straight onto the order

For anything bought by the bottle rather than poured to a recipe. Bottles of wine on the tables, crates of beer, cases of water.

Portions is what the order pours at the house measure. Bottles round up whole and the spare stays in the cost. Order cost £0

Equipment

The cutlery, crockery and glassware line is set by the format and the guest count. Pick the hire underneath and put the numbers in.

Service team

Pick the roles and put the numbers in. Hours are per person. The crew count on the event follows from this rota, and so do staff food and uniform.

Chef prep, porters and planning

These carry no uplift. They come straight out of margin, which is why a small job with a full prep band struggles to reach the target. The band matching the guest count is marked.

Venue hire

Passed to the client at cost unless you change the uplift. The venue is not ours to make a margin on unless we have negotiated one.
